    It's so simple. Just make real bread stuffing any way you like. Mine always has onion, celery, and meat, typically sausage, and some eggs, raw. Then fresh thyme, and sage, ground pepper and of course, salt. It's really good made with chicken livers & gizzards, or oysters. Or all of the above. I am definitely adding some Unicorn Dust to it too this time, and to the gravy.

    You'll need a lot of gravy. I typically use 2 - 3 gal stock pots so the dumplings aren't crammed in, and have room to move around while they boil.

    Make the stuffing, kinda on the dry side, roll them into balls, larger than a golf ball, but smaller than a base ball, and just drop them into the gravy gently. Let everything boil all day long. You want as much of the gravy as possible to cook into the dumplings and the longer that happens the more dense they become until they a moist all the way through. They will triple in weight and you stomach will let you know if you try to eat too many. Served with some sliced roast beef, turkey, or any other protein and you are good to go. Make some succotash and corn bread and look the Fawk out.

    I cannot wait until this project I am on ends so I don’t have to work with this fuckin lady anymore. She has zero idea of what a PM does and expects me to know every little detail of her project when she can’t even provide me a high level overview of individual tasks so I can put together a schedule. Going to lose my mind.

    The old ones didn't have shit. The new one has a roll bar and seat belt. I appreciate both.

    This is the mild part of the property. We have some semi-flat areas but for the most part, it's all hilly.
