    Impressive I don’t think I’ve ever made sausage and not had a blowout. :)

    I want one I get tired of trying to run it with the grinder. One of these years. :)

    It’s the amount of fuel to get to temp that’s an issue when Maner and I discussed we went over these variables. I’m not talking a small cabinet. I want something that will hold some serious food. :)

    Propane assist is what I'm thinking. Gas for preheat, then wood to maintain. Probably run two long propane rods under the baffle plate to soak the metal.

    I want to go full pellet for mine. If it’s sectioned off them the part not in use can have some heat fed off to it with moveable vents to make it into a warming section. :)

    Gotcha. Looked into dual hopper feed systems if going large scale? Will be sweet! Coming down to build it?!

    Trying to come down on a more perm basis. Haven’t really looked into the pellet delivery system, I want to make sure the hopper is a good size but also able to be emptied fairly easily. Would be cool if it could handle a couple loads of different pellets and then have. It switched based on what you want. I’m all about the pellet life for now. I want a stick pit again at some point but $$.

    That's what I thought you said but that's not what you typed.. and if you're working with Maner.. you're likely to get overboard right quick.. that's not a bad thing..but give me an example of how much you wanna cook.. like competition amounts or buying off the neighbor's loyalty amounts?

    My vertical can hold a LOT of food.. at least 10 pork shoulders at once. The new Lockhart has that sectioned off design you mentioned.. Not sure I've seen a pellet flavor dispenser but I think of the candy shops in the malls where you can have the rainbow of colors of jelly beans or just the red ones. I bet mine could be redesigned for 2 flavors but I can't envision needing more than 2.. and that's using mesquite for the beef and the competition blend for everything else.

    I can fit a decent amount on my Traeger (I have the bigger one) but I want more I want to be able to handle some catering and things of that sort. I only want to hold 2 types at once I don’t switch a lot but would be nice to be able to do it easier than emptying the hopper. The difference on the sectioning is I want mine removable so that if I want to cook a butt ton of food all at once I can easily.

    On the RecTec forum, someone wrote the best place to put the tube was in the back and left. Well, it certainly wasn't the left, as that is where the temp probe sits, and the heat of the tube caused the fan to cycle non stop. Damn internet forums, ya can't trust 'em!

    We found a deli style slicer at a local yard sale that I bought for $5.... Works like a charm and makes thin and consistent slices.. Only drawback is that its pretty loud when turned on.

    Yeah I do not mind it all and to me its a small sacrifice for good jerky.
