    I have done 1 brisket before but that was actually just in the oven. Coincidentally that was done for my birthday when my family got me my grill :p I have done a few beef rounds and smaller cuts too.

    Most stuff I do is the Yankee stuff. Went to Austin and was talking to a guy, told him my favorites on the smoker: Turkey breast, sausages, his response was "Yeah you can keep that Yankee stuff this is Brisket country". But, lesson(s) learned - don't sleep on the turkey and sausages, they're the best, and Texas is brisket country - I'm not a big red meat guy that's why I do the turkey and sausages. But damn, was that good. Don't worry about eating well :)

    And right after I sent the last message my supervisor came in and told me we're working Sunday >:| 7-12 shift, whatever. I'll make it work, I can bring it inside and set the oven to 250 instead of 225 and still be good.

    We were in Austin. I think it was more of a joke. Brown's on Lamar with the sausage and the turkey was the best. Brisket was awesome, but I'm not a huge red meat guy so I was all about that turkey. Maybe daylight savings will help me be able to smoke a batch Sunday after work.

    I think most meats (and many foods in general) are better on the smoker. To me something that goes well with a really good brisket is more meats. :rofl:

    Man that week in Austin was rough. Actually it wasn't that bad, wife is a vegan and we went to a lot of vegan places and they were all really good, where as around here there's like, one place and it's mediocre. And you walk in and feel like you're being judged by everyone for everything that isn't PETA. But we ended up doing real BBQ two days in a row and I was slogging through the day after that :|. I've gotten better at doing stuff other than just meat. My favorite was a mac and cheese I put underneath a pork butt :popcorn:

    Oh it's good but I'm with you I ended up with too full of a belly and then my day is about done. Not always a bad thing but not always a good thing either. Some good mac'n'cheese with renderings dripping into it is awesome. Couple people on here have some awesome recipes they make ofter, also some good beans.

    jesus man I might make it into orbit with that addition.

    Never did try the cheeses this winter. I guess I still have some time but I'd have to get the tube and pellets.
