    Need better pics, but this sliding broiler plate is awesome. One of the best steaks I’ve done in quite awhile. Asparagus and Brussels sprouts Parmesan on the side.

    Started out Rolling smoke for a few hours. Had to prop the lid open to not accumulate as much smoke as it was rolling heavy.

    After a few hours I tossed em in the oven at 180* til I reached 155 IT. Verified with Inkbird

    Into an ice bath to stop the cooking process until IT was less than 100*

    This was my impromptu blooming station... Broom handle, String, and a towel on the floor. I wanted to use two chairs on the table but I was vetoed :rofl:

    The On Point Batch i started out with a small ratio to see. It does have a slight more pepper kick than the regular batch as expected. Next time i'll move up the ratios. Super happy with the batch overall though

    Starting to form some good color relatively early. Threw on my salt again, (I think this will end up being over twenty hours on it) some beans and a pack of dogs for lunch.
