    Update... still rolling wrapped in the oven at 230, probing every 20 min or so. Point is now like butter when probed, flat is getting there (by feel) and is at 203, but still not quite like butter. Fingers crossed it turns out.

    Turned out in the end.

    some of the flat fell apart a bit but chopped it and mixed with the juice on the cutting board and it was fantastic.

    pull test according to Aaron Franklin was good for most of it - hung on its own, came apart with a gentle tug:
