    My wife says these are my best ribs yet.

    180 (smoke setting on my pellet popper) for 2 hours, wrap with butter and brown sugar and bump smoker to 300 for 90 minutes, unwrap and glaze with sauce and back on for 30 minutes to set the sauce.

    Going to be awhile yet before the pork butt is done. Not like I got anything else planned except work and thankful for that compared to some.

    3 hours ago put the slow N sear in the 26" kettle and used it as a template and heat shield for a snake. Poured some coals in about 3 deep. Been holding 225-250 whole time and haven't touched a thing.

    4 lbs. of Italian sausage no idea how it will turn out. Always used pork sausage with medium spicy mix but they were out. Yeah take what I can get when I can get it. Never had Italian sausage with eggs for breakfast before...

    My Pit Boss doesn’t actually have a P Setting. It just holds ~180 when put on Smoke.

    Did some ribs last night. They turned out really good. They were full spares that I trimmed down to St Louis cut. The tips ended up being used for chopped pork to add to the Mac and Cheese.

    Since I couldn’t go out to have my birthday steak, I did the damn thing myself. Tonight’s quarantine special includes ribeyes, some little tri tip steaks that will he used for breakfast tacos tomorrow, roasted yams, Brussels sprouts with honey, butter and bacon crumbles and a perfectly paired sour from Firestone Walker Barrel Works. Also pictured: the remains of an Old Fashioned made with Basil Hayden Dark Rye. I am content tonight.
