    Forgot to time. Somewhere between 8-9 hours. Then it rested for about 3 cuz I pulled it off around 3:30. Came out real good. First one with just SPG. Won’t be the last.
    I’ve never had a problem with tenderness or moistness. I always just wrap and rest for a couple hours though. Not sure if it’s the rest or what but it always comes out delicious!
