    I love putting a couple big butts on at like 5 pm and not having to worry about it as I sleep and then eat as much as possible the next day for lunch.

    One of those was for the neighbors, who love living next to a guy that cooks. I made them a spatchcocked turkey on Thursday, and that butt on Saturday.

    I keep going back and forth on a vertical pit boss for a dedicated jerky and fish smoker. Like my pit boss grill\smoker and keep thinking about the Lockhart.

    May be the best of both worlds. May be, still undecided and they haven't been in stock for a couple of months now. They sold out fast as hell when they released them. But a vertical would also punch the ticket nicely too..

    Replacing the water pan with a foil wrapped heat shield allows about 12 hours worth of charcoal. And easy enough to fill if needed.

    And with the ATC hooked up not a lot different than a pellet pooper. But you can actually get real smoke flavor much better than any pellets. If power goes out easy enough to run without the ATC too.

    But the ash is a pain in the ass. Seems like the older I get the more of a pain in the ass it is. Trash day tomorrow and will fill another empty dog food bag with ash to toss.

    Seemed like I always caught a part of that ash in my face, especially when I moved up to the big WSM, which is definitely bigger than the top of an empty dog food bag.

    I still have yet to find anyone who can tell when it’s done on my Traeger or a normal pit. :)

    They had one at my walmart. Only thing i didnt like was the main lid wouldnt stay open and it smashes your finger when you open the lid all the way

    I was checking one of those out and it was quite sexy. The only downside is the hopper is a little small so overnight cooks would be tough.

    Looks like it would be difficult to insulate and therefore would consume a lot of fuel in colder temps like we have to deal with.

    Advantage of the Pit Boss Verticals like the Model 5/7 .. Double walled and insulated.. tempered glass door 60# hopper for LONG cooks ... I enjoy mine a lot

    One reason I was thinking about that electric. I can set it for hours at a time without me there. Or I can set it to go overnight too. As long as it smokes into the stall, I don't see the need to keep smoke for the full 13+ hours for a butt.
