Well mostly I was thinking about how I was going to pick on @bvbull200 about the gravity thing.. the metal just seemed thinner than I would have liked.. but I'll be honest.. I didn't look at it super close.

 

Yeah theres no comparing the two...lol id like one about 3/4 smaller than they are making

 

I might have posted that picture in his build thread.. and the Masterbuilt one is about the size your wanting right?

I don't know of anyone that has one so you might as well be the first to master it! pun was probably intended

Thanks for the advice, the one I watched the guy had trimmed quite a bit of the fat then separated before smoking. What’s the advantage to keeping it whole? This is my first attempt at brisket, any advice is appreciated.

I’m using a Cuisinart 18” vertical charcoal smoker.

Random question......y’all ever had BAD bbq??


I think I’ve had great bbq, and good bbq. I’m not so sure I’ve ever had BAD bbq.

That’s funny, my neighbor who brought it over said I’d have to trim it and recommended Aaron Franklin for a starting point. Thanks, that was very detailed.

 

It’s tasty. But I didn’t wait in line! BIL was kind enough to send some my way.

 

The 3 racks were sitting in dry rub for about 3 hrs... meant to put it on the smoker at about 1.5hrs but my smoker had a clog (pellets got stuck so I had to troubleshoot).

After about 3.5 hrs. I'm now spraying apple cider vinegar + water on it till it's ready for bbq sauce

 

Never had that issue with my stick burner.

I bought some costco (traeger,) pellets and it was twice the size I normally buy .. just had to do little cleaning... works fine now

 

A $500 smoker with a $2805 signature.
