Food Smokers and Smoking Tips/Tricks/Techniques

Ribs are the shortcut method with the instant pot. For those wondering, I will not repeat. Sausages were awesome though. And my healthy meal was rounded out with tater tots.

 

And we eat. Mac salad, beans, tri tip.

 

Just put a 10ish lb pork butt on the easy bake. Decided to inject this one with a little premade garlic/herb mix, then sprinkled some onion and garlic flakes on it and topped off with a good dose of Pitfaced spicy. Gonna put a temp prob in and top off pellets before bed. Small ham goes on sometime tomorrow for Easter dinner.

Alright, here we go. I had some Costco wings in the freezer so I decided to try some triple dipped, beer battered wings on the vortex cooker.


They were good but I probably wouldn't do them again because I like them just as well without the breading and it's a lot less work. I did some for me tossed in Buffalo sauce and butter and left a bunch for the wife just plain in the seasoned breading.

Yes. I cheated and put a pre made kit from panera in it along with chopped up extra crispy bacon

Applewood smoked baby backs with a maple brown sugar rub and honey terriyaki sauce. Wife wanted sweetness tonight.

Sticky pork ribs

Smoked 8 hours with oak

Glazed with scratch made bourbon barbecue sauce.

Made with fresh tomatoes, garlic, onion, jalapeño, undisclosed vinegar & spices, Willet Bourbon & dark brown sugar.


Service with garlic mashed potatoes & broccolini

 

Easter Ham on the smoke. Simple meat message, brown sugar rub, injected with apple juice and a little local apple jack.

 

Here’s the apple jack. Local distillery, switched to making sanitizer and only donate it to local first responders. Hats off to them. It’s owned/operated by a retired army pilot.

 

I was going to ask about the apple jack.. your ears must have been burning! haha

All the local distilleries here are making hand sanitizer.. even the local ethanol plant is able to make it now that they have changed the rules for them to do so..

We just had a 55 gallon drum of the stuff allocated to our station! Finding spray bottles is a whole other topic though

It is pretty good, but not something i can drink daily. That was numbered 2 of 100. Had to try it.

 

good use of it though!

 

15 hrs in. Nasty strong storms moving in so it might get fun finishing up

 

Wrap it up and finish in the oven is decent option in that situation.
