    Yeah I’ve got that on the back burner as plan b. Smoker is under a carport so just waiting to see what the storms do. They’re calling for 40+ mph winds and 2-4” of rain with flash floods

    I definitely wanted to, but I got over ruled on that one.

    We don’t usually do Easter dinner, but due to the quarantine we decided to use it as a chance to experiment for Thanksgiving. All the sides we are making are new to us, so she wanted to do the turkey the way she always does so we can have one thing that will be good for sure lol

    5100s with Eibach coils and zombie Dakars.
    What kind of thermometer are you guys using? I've used a Thermapro for years and the probes keep going out on me. I just ran a test in a bowl of hot water and it was over 100* off.

    I had been using a thermopro foldable style, but I recently picked up a Thermoworks 600D. Not as fancy as the thermopen, but it’s reliable and works very well.

    I wish I could’ve got a finished pic, but my wife started carving while I was tending the baby. This was one excellent bird. My wife did her usual treatment on it: slathered in a compound butter consisting of rosemary and orange peel with hefty doses of salt. Stuffed with a quartered onion and orange. The Pit Boss baked this thing like a champ. It was what I needed to convince my wife that it’s not just a ‘smoker’.

    This is a pic of it a little before we pulled it out.
