    Probe for Temp first, then tenderness.
    Looks good from here. Find the fat, cut and lift up the flat as you go.

    brisket is the toughest part of the cow. It has tons of connective tissues between the meat fibers. You cannot cook it to med rare and eat it, it would be horribly tough. Taking it to at least 195 breaks that tissue down to collagen, tenderizing and moisturizing at the same time.

    Yup, that mon-fri gig wasn’t for me. Yeah I said the same thing about going back. Took 3 weeks off between leaving and going back. All hell broke loose in that time frame. Lol
