Sorry in advance. I'm not very knowledgeable with tires. I usually find used tires off craigslist and have them mounted but this time I'm looking at buying new tires... I'm looking at swapping out my 285/75/16 for some 295s that are 12.5 wide. Though, I'm trying to keep the same wheel. I have some Ultra Motorsports that came with the truck. I was wondering if I can fit the 12.5 wide tires on them? I do occasionally air down. Would I have problems?

295 tires are around 11.6" wide, not 12.5 so you should be fine. But it depends on the actual wheel dimensions and the full tire dimension as well. What 295 tires are you looking at? They are usually taller and might cause rubbing vs the 285's you currently have.

Yeah I don't mind do some trimming. I'm looking at the Ridge Grapplers.

Assuming you are looking at the 295/75/16 Ridge Grapplers, they are 11.57" wide and 33.39" tall and should fit on 7.5-10" wide wheels. They are a bit tall and you will most likely end up with rubbing on the cab mount and need to beat in the pinch weld and do some flare trimming. They are only .3" wider than the 285's you currently have so it's not really worth the upgrade since it won't really look any wider. The width of 285 is 285 mm so the 295 is 10 mm wider. Some tires are listed in metric like 285/75/16 (285 mm wide/ sidewall is 75% of width/ and 16" wheel) and others are standard like 33 x 12.5 x 17 (33" tall x 12.5" wide x 17" wheel).

My truck has 305/65/17 which comes out to 32.6" tall x 12" wide x 17" wheel. I get some minor rubbing on the cab mount at full lock but my truck has 3" of lift and SPC upper control arms that are adjusted to push the wheel forward a bit to reduce the rubbing.

Ah thanks I appreciate the help! Yeah I went 295/75/16 Ridge Grapplers. We'll see how much cutting I have to do in about a month.
