    yeah part of it was that I had a different idea than reality. I’ve seen plenty of overhangs used which is fine. I thought I could make a pseudo overhang out of what I already had. Once I put it together even 6 beer me realized that’s a terrible, terrible idea to execute on.

    oh well. Back to the drawing board.

    Ps since y’all like this kind of stuff. The spoils of today. Yielded less leftovers than I was expecting partially because I smacked while shredding. But I won’t complain I have enough pulled pork for a weeks worth of meals now.

    Likely the best move I ever made in smoking and grilling gear.

    26" for smoking and 18" Jumbo Joe for steaks and call it a day. Honestly could get by with those 2 for everything I ever need to do.

    Have you considered doing pork belly burnt ends? Won't take nearly as long.. pretty sure @Misplaced Nebraskan has perfected them.

    Haha I wanted a vertical smoker wide enough to lay down a whole rack of ribs.. got one that could do at least 28 racks using rib rack shelves haha! Actually the most I've cooked at once was 8 shoulders for my neighbor's party.
    I learned a very important lesson that day... Deliver the shoulders whole and let them do the pulling! HAHA! My hands hurt just thinking about that!

    Friend of mine does BBQ comps and him and the guy he does them with came up with their stainless steel rod they connect to a drill. They put the butts (more than one at a time) into food buckets and put this down in there. Full nice shred in under a minute. :)
