    Start a couple of hours earlier than you think you will need. You can always rest it for an extra hour or so after the cook, but you can’t make it cook any faster to make it ready for mealtime.

    Thank you! Yes I heard it’s fairly forgiving so I want to do it before a brisket. Stoked to use the smoker more this summer!

    yeah for a long cook it’s the most forgiving. If you keep it between 225 and 250 you won’t be able to mess it up.

    sausages are also forgiving. At least they have been for me.

    Skirt steak tonight for tacos, and leftovers for whatevs. Used the “freebie roadside find” Weber kettle since it’s more shallow than my other one for a good sear (still too nervous to attempt the Alton Brown direct on the coals method).
