I have a 2006 Double cab sport short bed 4x4. I recently installed Bilsteins 5100s all the way around with new coils in front and Denver leaf springs in back. Raised the whole tuck just under 3 inches. Now when accelerating just after takeoff there is a vibration. Mechanic installed a couple of washers as bushings at the mount where carrier bearing on drive shaft is. Could that be the problem? Maybe not enough? Or any other cause?

There is a ton of threads about this topic. Carrier bearing shims, leaf spring pad angled shims, single piece driveshafts, traction/ladder bars, and better leaf springs are some of your options.

Most likely the drive shaft is at a steep angle causing it to run therefore making vibrations

If it’s right at take off unlikely the front dif needle bearing. Although should replace it anyway. How thick was the washer stack? 1/4” carrier bearing spacer got rid of my shudder with similar rear lift

Do not do this . I tracked my vibration down by jacking the back wheels off the ground and with the wife in the truck I got her to accelerate. Right away I saw I had a bad ujoint . If you do this in 4wd all four wheels have to be off the ground . And don't throw it in park until all wheels stop.
