    I’m sure you’ve heard of the well known pitmaster Tootsie. If not google Snows Bbq Tootsie. That lady is probably close to 80 yrs old and she’s been smoking meats for over 40yrs. I’m sure she breathes that smoke every time she cooks and eats some bbq also. You’ll be fine as long as you’re not eating straight charcoal or pellets. Enjoy your food!

    I always say don’t believe everything you read, especially from the internet. I will eat and enjoy my smoked foods till the days I’m no longer around. :)

    Holy chit, I've done a lot already!!
    Just finished a couple batches today. I cut my own, so timing may vary from yours. It took me about 6 hours today at 165° on a MES 30", at 50° ambient. In my smoker, it is essential to rotate the racks, and also move the pieces around periodically. I also don't dry it to go back packing with, but to keep in the freezer/fridge, and eat. Therefore I don't worry if it's completely dried out for preservation purposes. If I use the jerky shooter, IIRC it's about 2-3 hours. I personally prefer the ground in the shooter, but my B-I-L gave me a few roasts, so beggars can't be choosers. Hope any of this helps.

    Cinco de mayo! I sous vide two barbacoa vac packs I had from last year. Interesting to see the two different styles I did at different times. Homemade tortillas in the cast iron and mango salsa. :cheers:

    My wifi came in handy yesterday, as I was out on a bike ride, but also had a spatchcocked turkey on the EZ Bake for the neighbor. Pulled over at my turning point, pulled out the phone to check probe temps, saw it was done, shut the PP off and pedaled home. And the neighbors love me even more!

    Would double like this if I could..

    A lot more to the whole smoked meats and cancer thing than meets the eye.. Every other day for the last week been grilling or smoking but haven't posted pictures work is crazy right now.

    I started out in medical research almost 20 years ago and when things got heated in meetings would say sorry I don't recall, does coffee kill you this week or not? After awhile didn't get invited to so many meetings which was fine by me, I could get actual work done LOL.

    Wouldn't worry about it with a pellet pooper not like it really gives any real smoke to the proteins especially for a short smoke :anonymous: Sorry couldn't resist but now that I own one...

    Going to be eligible for SSN retirement in 3 weeks. But will likely work until ~67 making more money than I ever have even with furlough and paycut until the end of the year. Most of the men in my family never made it beyond the age of 69. Hope I do but none of us are promised tomorrow.

    Ideally you will arrive at the grave with the woman who stuck behind you for your life, and be blessed. I backed the wrong horse for a quarter century and now it is not to arrive at the grave preserved and looking fine but worn the hell out with a good looking lady under each arm and saying "What a Ride!" Or close to it...

    You only get one chance to make a ride on this thing called life, enjoy it. Think I'll pour a Scotch and go have a cigar out on the deck. I look at things differently now.

    Hyman recently had a full medical check up. When he returned 3 weeks later after the exhaustive lab tests were complete, his doctor said he was doing "fairly well" for his age.

    Hyman was obviously a little concerned about that comment and so asked his doctor "Do you think I'll live to be 80, doctor?"

    He replied, "Well, do you smoke or drink beer?"
    "Oh no", Hyman replied, "I've never done either."

    Then the doctor asked, "Do you eat grilled steaks or barbequed ribs?

    Hyman replied, "No, I've heard that red meat is very unhealthy."

    "Do you spend a lot of time in the sun, like playing golf?" asked the doctor.
    "No I don't," Hyman replied.

    Then the doctor asked, "Do you gamble, drive fast cars, or mess with women?"

    "No," said Hyman, "I've done none of those things."

    The doctor looked at Hyman and said, "Then why do you want to live to be 80?"
