I am more inclined to address what you do in-between uses. How do you clean it after use?
I only use water and a brush, while still hot/warm, with hot water, then air dry. The seasoning accumulated over time.

Same. I treated mine like lace the first couple of years, just cold/lukewarm water and no soap, then dry it completely, then rub a thin film of oil on to store it.
Now that it's built up a good seasoning I use hot water, a little soap when needed, and just dry it off. I don't bother with oiling it afterwards any more, but that's mostly because I use most of my cast iron just about every day, so rust really never gets a chance to start. The dutch oven gets used less frequently, and that gets a coat of oil between uses, but I only use that a few times a month.

i pretty much do what Curt does. if it is particularly nasty, like i just cooked some sweeten bacon, i will pour in some hot water and let the pan simmer a bit..then brush it out, put it back on heat to dry and wipe a drip of oil around. i try to wipe it clean like i am trying to get all the oil out.

Any of y'all use the chain mail cast iron scrubbers? Ive used one for a while, and they do a really good job.... mostly. I think if you burn something to the pan it won't get that off entirely. I noticed my flea market rescue Wagner wasn't as non stick as it was, so I scrubbed it hard a couple weeks ago with a green scotch pad and got all kinds of black crust off. Seems good as new now.

Anyway, here's the breakfast aftermath - pancakes and bacon.

I have a similar pan from Griswold. It’s my most used pan, mainly because of “tortillas”. I just leave it on my stove top. Total multi-tasker. I bake small roast with it, potstickers kick ass on it, etc. this one got a bit crusty so I baked it for an hour in my grill as hot as I could. I tapped it, and carbon dust fell off. I then wet sanded it with paper until it looks shiny and silver. It was a bitch to season. It was so smooth, the season was slow and incremental. Ice age slow.

I have a bigger one, even slicker. It’s un-marked, but i was told it’s older. It’s not crusty, and I’ll never sand down a pan again.
