    What was your details? Recipe/Hops/when used/fermentation/etc. if you want to share.
    If it's lacking bitterness, you may have not had as much hops in the boil as you were looking for. The fermentation time shouldnt affect the bitterness if you had enough in the boil, generally.
    Airlock activity definitely CAN show yeast activity, but it's not the only way. Gravity readings, 1-2 days apart should be stable for the beer to be "done" fermenting. Your total time in fermentor for an IPA should probably be less than 3-4 weeks.

    Fresh raspberry and blackberry juice upfront. Smooth and sweet with a similar body of a milkshake brew. Vanilla notes midway through and a smooth coconut/berry finish. Lingering light coconut at the end. Proper and enjoyable sour.

    I actually just put together a recipe for a Dunkel last night. That’s a pretty good example.

    Today is a little funkiness with a side of heat and humidity. A very good beer, but funny enough I don’t like scuppernongs.
