    This was about an 8 hour smoke

    smoker @ 275 for 4 hours using hickory chips, water / apple cider vinegar with a whole yellow onion in the catch bowl
    used mustard for a brine, light coat, then fully seasoned with tex joy steak seasoning

    basted with equal parts red wine / water / apple cder venegar in a spray bottle every hour
    A 3.5 hours I took it off and wrapped it tight in foil with my prob, removed @ 198 deg
    hard baste was honey, sweet baby rays and apple cider vinegar - nuke for 15 seconds, mix it up and coat the meat
    placed back on smoker 20 min, rest 40 min .. will report back when I shread it up.

    Not to go back to this but the down side to these cases that I use, every few months you do want to clean them. The speaker and finger print thing are gaps and dirt, dust, and dog hair can get back there. Cleaning is sort of annoying since you need to unbolt the thing to clean it :D worth it to me though. Just had to do mine tonight there was a dog hair in there for a week or so that was starting to get on my nerves. Only takes a few seconds but still, more work than a regular phone case and screen cover.

    What’s everyone tend to use for BBQ sauce? :D I’m sure that question isn’t loaded or anything. My don’t care sauce is regular sweet baby rays, my care a bit sauce is Stubbs. The good stuff is home made.

    There are three things in life that, for different reasons each, I will not do and will happily pay someone else to do.

    Domestic electrical work.
    Vehicle body work (paint is a 50 50 shot depending how good it needs to be)
    Making sausages

    Butcher or store whatever. That's something that will probably be someone else's task for my whole life. :D

    Ok so me and a couple guys at work have been really bored lately and got into watching Hot Ones on YouTube so I decided I needed to make some vortex wings this weekend (if you haven't seen the show there are definitely some entertaining episodes worth checking out).

    I did mostly the usual Frank's sauce for me and sweet chili sauce for the wife but felt inspired to challenge myself a bit too. I have some Trader Joe's habanero sauce that has been pretty spicy but really tasty so I did a half dozen in case it was too much. I'm pretty sure that stuff is meant to go on smoked wings rubbed with meat massage, it was absolutely delicious, a decent amount of sweet, a good heat that sticks with you but isn't overpowering. I highly recommend trying some if you like hot sauce and have a Trader Joe's nearby.

    Did a pork butt today without bone. First one I’ve done without a bone in quite some time. A little over 5 lbs. Did it at 250, wrapped and raised it to 300. Took 7 hours on the egg.

    Got the smoker's coals almost stabilized for the 2 shoulders. Meat has been salt-water brining for 6 days. Hope everyone's food turns out perfect!

    One of the first things I got for my WSM (18") was an Automatic Temperature Controller (ATC). Basically it gives it the ease of use as a pellet pooper. Rock steady temps and you don't have to baby sit it but can cook with your choice of fuel and wood smoke. Mainly did it because of below temps, last thing wanted to do was keep going outside to adjust it when it is bone breaking cold.

    I built a box to house the unit to protect it from the elements and used a sump pump hose for air supply.

    Did I mention it is rock steady without touching anything except a computer or phone screen from inside?

    The 2 most common adapoters they sell are for WSM and Ceramic cookers. Good friend of mine has one on his BGE.

    Today if in the market I would take a hard look at the Thermoworks billows. Thermoworks just came out with the Smoke X and Billows X but no reviews yet. Have a lot invested in Thermoworks equipment including the Wand forehead thermometer that just came out. More than pleased with everything Thermoworks makes.

    Before this COVID hit I was looking hard at upgrading my old Motorola phone to a Samsung S10. Been limping along with the Moto Mod battery pack for a few years now the internal battery died a long time ago. Like all electronics the longer you wait the more options you have. Although development has slowed down somewhat with the virus hitting even that area. Camera is one of the most important features I am looking at.

    Moved to Mn. from NC where I was stationed\lived from the vinegar based sauces on the coast to the tomato based sweet sauces of Western NC. And of course the mustard based sauces in SC. I like both Sweet Baby Rays and Stubbs.

    But started Atkins doing 20 gr. of carbs daily max at the end of January. So no sugar of any type for me. Or beans. Or mac n cheese. Or bread or potatoes. and my A1c has dropped from 7.2 to 5.8 without any medication just good old fashioned meat, eggs, cheese and salads with blue cheese dressing. And bacon, lots of bacon. Been using G Hughes sugar free BBQ sauce and is actually pretty decent. They even make a mustard sauce version.

    Bad storms coming through right now and rest of the day. Off work on furlough this week finally able to catch my breath from work, will be much smoking and cooking going on this week. Clubs are finally starting to throw birds and 3 days this week will be out shooting clays. Staying in place is not helping my finances, should have this new 20 ga. SxS in time for my Thursday shoot.

    I'm a sucker for nice wood :anonymous: Should be saving money instead of spending it with all this furlough time without pay coming up. But as Ron White said I didn't have the ability...

    My 5.5 year old male Toller sister came to live with us as of yesterday. Going to be interesting and a lot of work. She has never heard a gunshot or tasted feathers in her mouth. Yesterday the city girl seen her first deer about 15 yards away in the backyard and went bat shit crazy.

    Going to be a lot of work but I'm sure I can fit in a smoke or 2 this week. Maybe even 3. Also need to get the chainsaw out and finish cutting up that downed oak in the backyard now that the snow is gone.
