    Up at 5 and sat down at 6 to connect to work. Dumb thing to do. Was almost 9 by the time got the pork butts on, damn work thing.

    Running 275-300° on purpose. With butts running hotter than I normally do doesn't seem to hurt them a bit. 8-10 hours instead of 12 plus works for me. The older I get and the more smoking I do the less I worry about running at a specific temp, more a range now. And don't do probes so much anymore. After 8 hours will stick the Thermoworks in to check and once in awhile after that. They will be done when they are done.

    I like your style :thumbsup: I used to do the same, before I got real thermometers and the side fire box. Still operate in a range more/less.
    You can also rip right through a stall, sometimes, with the higher heat. I do love a good butt! Sliced or pulled!

    Starting to get that way, way more relaxing than trying to time something for a specific time.
    Throw it on, check it a couple of times, pull it, rest it, serve when ready or the next day.

    I don't do the probes either, I use a regular meat thermometer when I think it's near done. Or I do check and make sure I am in the stall before I pull it and put it in a boring oven.

    I have started to realize the benefit of doing the smoke prior to day of. My family is not a "smoke and sit" family, so for them to show up and then be told heyyy extra 2 hours SURPRISE doesn't always go well. So smoke the day before, get it all done up, and then heat it up the day of. Haven't noticed a loss in quality at all either.
