    Ummm...not to be critical...but was cilantro an option?

    Asking for some friends.

    Oh, and how is salmon and guac? I'm curious about that flavor combo.

    That guacamole had garlic, red onion, cilantro, jalapeno, and lime.

    I wouldn't typically put cotija with fish either but for some reason all three of them in combination really worked well. It might have been the heavy chili and cumin rub on the salmon.

    California Jambalaya. 2 lbs shrimp, linguica and chicken. Cooked the rice and chicken in the linguica juices. Cooked the shrimp separately in butter, beer and garlic.

    Ok.. I admit I had to Google what linguica was but that looks amazing!!

    Red and Green Bell pepper
    Celery
    Jalapeno pepper
    Pasilla pepper
    Garlic
    Onion
    Green Onion
    1 lg can diced Tomato
    Beer
    2 lb lg Shrimp
    1 lb Chicken
    2 Linguica sausages
    1 c Rice

    Cook all vegetables in large pan with a little oil and salt. Set aside. Cook sliced linguica with a little oil. When almost done add cubed chicken. When chicken is almost done add rice and cook well. Add a beer. I prefer an IPA. Add vegetables back. Add tomato and a cup of water, salt and pepper, maybe some red pepper flakes if you like it spicy. Cook 20 mins covered, maybe another 10 uncovered to reduce liquid. In a separate pan cook shrimp in beer, garlic, butter and salt till firm. Discard liquid and add to Jambalaya. Stir in gently adding chopped green onion. Serve with hot sauce and more beer.

    Sidebar- I googled linguica and realized all linguica is not alike. It's a very CA thing. And ours are about a foot long. So you want 2 ft.

    Same here, 2 people. It microwaves well. We usually finish it off. And the wife is getting used to spicy. At last!

    Basically Portuguese Linguisa sausage. And beef. It’s super smoky and paprika-y. Zero herbs. I had it at a Portuguese crab feed and it was the best thing served. I asked how they made it and 4 Portuguese ladies all got into each other’s faces trying to offer me their secrets. It was fun. The ladies couldn’t even agree on a brand of sausage.
