    Well in reality, you can do whatever you want. You don't have to do what I did..but do something that will give enough feedback that will allow people to make the decision to #1 keep/upgrade/downgrade the recipe and #2.. convince the masses that it's a rub worth buying 5 pounds of at a time.

    Speaking of garlic... Overnight I dehydrated 2 cups of minced garlic and ended up with about 2/3 of a cup

    At the same time I has taken some whole garlic cloves and CAREFULLY sliced them on a mandolin and dehydrated them as well... The goal for those "chips" is to be ground into my own garlic powder.

    I'm a total fan of the garlic and black pepper taste and have a ton of ideas haha.. and likely ADD or something. I like to play with my food!

    Make sure you check the turkey breast and see if it's injected and what percent... Otherwise you might inadvertently make it too salty.

    Use it to cook whatever you're going to cook anyways. If someone makes 20 racks of ribs every year then try it on ribs... I wouldn't try something new because you don't have anything to base it on.

    My sister texted me from NC today that the smoked pork butt they did for fathers day on the WSM for the first time turned out so well they want to do another larger one on Friday. Asked if 1.5 hour per pound was a good rule, they found that on the internet so it must be true. Told her to start earlier at least 2 hours based on that formula and then wrap and rest in a cooler until they were ready to eat.

    Speaking of the internet listening to FM classic rock station right now while my salted ribeye is sitting at room temp for an hour, and tonight classic rock is 1974. Said the term internet came about in 1974. And then started to play a BTO song and said maybe you listened to it in your first car. Yep. 1967 Mustang, 289 burnt orange. On 8 track with quad Kraco speakers from K-mart. And they also mentioned that the string bikini came out in 1974. Yep I was in Daytona Beach for Spring Break then.

    Uh Oh now I shot the sheriff but I didn't shoot the deputy...

    GREAT SCORE! I smoked literally hundreds of pounds of Salmon in Wa. State back in the early 80's on a Little Chief. Probably broke a ton to be honest including steelhead both summer and winter runs.

    Back then they were made by Luhr Jensen and were kind of the gold standard for fish and looks like that is what you have, did I say great score? Recently (last decade or so) Smokehouse Products purchased them and took over manufacturing and they are a shadow of what they once were. Like any smoker there are mods you can do to bring them up to speed however. But doubt you will have to :thumbsup:

    yeah, pork loin and turkey :) could do chicken thighs instead of turkey, I usually smoke the turkey. Loin is 50/50 smoke or not, chicken thighs almost always grilled instead of smoked and do those a lot.

    HTFF... yup. so many calculations trying to fight their way to the surface right now! must go drink to suppress! :rofl:

    and great advice on the butt. I quickly learned the 1.5 hour/lb rule was just the most basic blindfolded dart toss from the top of the grand canyon :D

    Time is only one factor... Temperature, humidity, wind, dew point, time of day/night, season, location on the planet just to name a few... The only thing that really matters in the IT.

    My advice to novices is plan for 12+ hours and when it's done it's done. IT tells the story. Jack Daniels might enhance the story but IT ... No matter low and slow or hot and fast .. IT is the goal.

    I will wrap in a couple layers of foil, then in a towel and then keep
    It inside a closed cooler. Will keep warm if not hot for some time.

    Hey don't blame me! Wasn't until about 79 that I had "relations" with a girl from Iowa. Wasn't the prettiest flower in the bunch but damn she had the biggest heart I ever met. Navy kept us apart and I often wonder how much different my life would have been if I would have stayed with Sue. And feel like walking a mine field here dating, even though I work and live in a target rich environment. 25 years married to the wrong horse and she went to go find herself and left me and the boys, I am gun shy to begin with.

    But all the ladies here seem to want the same thing, to get married no mater what age they are. Even the "Hippie" I dated from Madison, Wi. for a number of years. Doesn't feel good at this point breaking hearts because I am not so inclined to get hitched again. But if I do feel the need to I am in the perfect spot, most of the ladies have hearts so big it breaks mine which is why I have a hard time dating them.

    The dog on the other hand hunting ruff grouse seems to like the 70's burnt orange. That couch at the cabin is the same one I had in my first couch back then. He is worn out enough really doesn't give a shit though.

    I always took you for a smart man and you always seem to reinforce that thought...
