What brand lump charcoal is best to avoid all the little pieces? Cowboy brand lump bags seem to be full of tiny pieces. I’d like pieces that are the size of a half dollar or bigger.

You can cure your jerky which is going to help preserve it for a longer time. If you are going to eat it right away then you don't need to.

It is not just salt there is actually nitrites that you're adding to the meat to preserve it and to prevent botulism. It is called pink salt or curing salt or curing number one. There's a big difference between that and cure number two! Do some research and do not confuse these.

I will try to follow up on this in a little while when I have more time.

Depends on the recipe i try to stay away from the "cure" required recipes. Salt, soy etc usually higher and so it keeps long enough to get eaten here. I think my wifes recipe is 24-36hr with a stir every 8-10hrs just to try and keep it even. The meat pieces should look like they absorbed spices or marinade. Then get temps of meat over 160° dehydrate to desired texture.

I only did a pound and I stuck it in the fridge. I’ll do as you suggest and do more research.

Its really good. You can keep it in fridge for longer time or freezer for a few months.

Ok.. first things first.. Right now Home Depot is having a sale on 18v Ryobi batteries. Basically it's $99 for a 2 pack of batteries and 1 charger and with that you get a free tool up to $79.97 value. WTF does this have to do with smoking? Well.. one of the tools I picked up was this nifty little thing!
    IMG_20200627_180327022_HDR.jpg

It's a little power washer.... Hooks up to a garden hose and while it's not the greatest most powerful thing in the world.. it does do very well to clean the grates and water pan in the smoker!

    IMG_20200627_180358774.jpg

It's all ready for the next go!

I was going to buy batteries anyways so why not get something handy! I still have more tools than batteries but I'm getting closer!

Some of my tools I've had for 20+ years and they're still going strong! I wanted more batteries to avoid having to switch them all the time. I picked up two of those deals so I got 4 new batteries and got a jigsaw for my other tool. I have a corded one but figured why the hell not ya know?

No joke! I didn’t even like smoked food until I started doing my own.

I know they have a version of that but you'll have to check out which model etc to see if it's part of the deal.
