went to a friends yesterday for dinner and . He made brisket and ribs. It was cooked perfectly, but he must have use salt and celery salt in the rub. The bark was very salty on the brisket.

Tell me when and I'm there!

I just discovered a minor issue with my pellet smoker. The brisket I have is to big... I can think of 2 solutions to remedy the issue. 1. Cut the flat off it to cook it the 2 pieces at different times and 2. Bring it over to your place to cook. For some reason I just dont want to cut it into 2 pieces even though I can see some benefits for the cook. Long term there is really only 1 solution, I'm gonna need a bigger smoker.:anonymous:
I'm pretty sure at this point I'm just looking for excuses to get a bigger smoker and I've only used it 2 times. I may have a problem.

Looks we might be talking about a smoker build sooner than I originally thought.
