    Yep, my fault for not wrapping the brisket. I should have trusted my instincts. I actually like the ribs falling apart personally. I'm also not a big fan of the baby back ribs. I also like to render all the fat out, then finish them on high heat to crisp it all up. It just adds to the fantastic bark.

    Well my pork butt from yesterday ended up taking much longer than I expected to finish. 16.5 hr cook, was 12:45a last night before it was done.:facepalm: Thankfully I wasnt planning on eating it yesterday and it came out great!


    Gonna vacuum seal it in 2lb portions and eat it over the next few weeks.

    Used to eat them all the time. I think the McClure are a better kick to em. But it's been awhile.

    If only I could figure out the egg better for smoke rings :rofl:my pellet rig puts them on good. This egg just burns so efficient! More chunks of would maybe...

    Really just made regular recipe for lemon meringue and split it. The peach pie I just halved a recipe. Little more work but I like the mini version better. Saves me from killing a whole key lime pie again :rofl:
    . Not that that's a bad thing :D

    dry. Looks maybe a little under done in some spots. Bark looks good.
