    A buddy of mine shot a Coot in the TN river here and cooked it just to see what it tasted like. He said it was like greasy ass fish, horrible!

    I started doing this a few years ago. I will never cook any bird any other way. They just cook so much faster and evenly. They are also easier to dismantle and carve. Also, no soggy skin from it sitting on the bottom of a pan. I usually just grill them, but you can also lay the bird over carrots, celery, and potatoes in a pan. My smoked turkey this year was spatchcock and it also came out great.

    I marinaded it in some lemon juice and a little dales sauce for ~1 hour then sprinkled on a good bit of lemon pepper seasoning, garlic powder, salt, and some Dijon mustard dry rub. I let that hang out uncovered in the fridge overnight, seared the thighs skin side down for ~5 mins and put them in the crockpot skin up on low for 8 hours (they were likely done in half that but I was at work)

    Made some soufflés tonight. I’m terrible about digging in before I get a proper photo. Couldn’t find smaller ramekins so it didn’t quite rise up enough. Gonna double the recipe next time which will give me enough to have it rise and have enough for a 3rd

    Grilled a bone in porkchop to try out a new rub, grilled then smashed baby potatoes and cooked some corn and bacon in a cast iron pan on the grill.

    Thanks Zach! It's not a top quality photo like yours but the flavors are definitely there!

    Yea... Waiting on the results of my second COVID 19 test. And for those that are getting the new test.. I'm jealous.. they're still doing the long q-tip method here... THE worst thing ever!

    Thank you sir.. obviously had my normal PPE on and everything.. not too worried about it.. but just in case I am stuck at home ... Any good food or new recipes over there in the mountains? I could use some fresh ideas

    We did a breakfast casserole the other night for dinner.

    2 Tubes of biscuits (or equivalent homemade)
    1lb bulk breakfast sausage (usually use mild or medium)
    2 Cups Sausage Gravy ( make my own)
    1 cup sharp cheddar
    6 Large Eggs

    Cut biscuits into quarters. Grease baking dish and place cut biscuits into dish, top with breakfast sausage. Beat eggs, pour eggs over biscuits and sausage. Cover with cheese, spoon gravy over top. Bake at 400 for 45-60 minutes.
