    Great plan.

    Adding "sous vide" in the name of any container adds like 200% to the price. Most of these can be purchased at Walmart for like $10....

    I got the ~$100 Joule a couple years back before Breville bought them and doubled the price...

    I never had much of an issue, but I'm assuming that is referring to insulation and temperature resistance. With my pans I usually just wrap them with a towel if I am concerned about heat loss. Food grade doesn't matter much since the food never touches it.

    Not necessarily if I may butt in...

    You are already putting the food in the sous vide bag which is "food grade". I used to use ziplock bags and the water displacement method for removing air before I got a vacuum sealer.

    More of the fact that you need something that can handle the cooking temps without deforming, and a suitable lid to keep the water level from dropping.


    Also, biggest point of failure of circulatory is steam getting into the electronics. Which is another reason for a lid.

    x2 for the Joule. Had it a year or two. Works really well as a unit. I hate the app and have integration issues but it works well enough so I haven’t truly tried to solve the app issues.

    I cook in a metal lobster style pot mostly. I’ve done a cooler cook for two dozen steaks before but needed a better lid setup to hold good temperature. It took a long time to get to temp.

    Anyone near Lubbock go get you a drum smoker at a great deal. Also check your local Walmart’s if they carry them. They’ve dropped the price on them everywhere to this. Saw in the Owners group where Academy matched the price too.
