    I just picked up a 10 lbs Boneless Beef Shoulder at my local Smart & Final grocer here in SoCal/I.E. for $3.50/lbs.

    I didn't know until I google'd when I saw it. I'm excited to try it.

    Red meat here in SoCal is very expensive, typically $10+/lbs because of Covid-19. I haven't seen a cut of beef anywhere near pre-covid prices for months. Pork has been at great prices recently even though a lot of pork slaughterhouses have shut down across the nation, but I've had pork the past 2 weeks, and I've been missing eating a nice cut of beef.

    @bvbull200 got me craving some armadillo eggs. As many poppers as I've made, I've never made these. Figured now was a good time.

    Pro tip that I found (new to me anyway). Use this little citrus tool thingy to core the jalapenos. Works great! And most people have these as hand me downs.

    Hands were messy so jump cut here...

    Venison bacon blend (with on point mixed in) for the meat layer and then wrapped in bacon and dusted with more On Point. Theme going here...

    Pellet pooper at 250* for about two hours until IT of meat was 165*

    Made a glaze of raspberry chipotle and JD whiskey to thin it a bit. Brushed on and left on pit for another 5 or so mins.

    Damn! These things were good! The Tillamook doesn't melt the best but was still delicious. These will be made again.

    That smoker is $134 or so, about ten miles away. With Walmart clearance, it's always a crap shoot. I think I'll save my energy.

    They have them in the stores for that price also. Saw the pics in the OK Joe owners group and did the same as the ones that got them at Walmart. So it’s in stores and online.

    I have been using a Lodge cast iron griddle on my gas grill lately and I love it. The temperature is so much more consistent with it. All grills and smokers have a hot spot and the griddle helps keep the meat at a consistent temperature. I made burgers for lunch and they were perfect. No char and they were well done in 11 minutes for a 1/3lb burger.
    These pork chops were great. My wife bought the meat and I can't stand what she brings home sometimes. Get the thick chops woman!
