I think they were wisely investing their PPP money to increase capital to buy more inventory...

BTW this kind of fraud was expected as a byproduct of making the funds easy to quickly distribute. This is the system working. Get the money out and we'll catch the thieves later...That's why you'll hear a lot of stories like this over the next year or so...

Finally got around to doing this Tomahawk Steak. A little 1 vs 2 testing

    Split seasoned

    00100lrPORTRAIT_00100_BURST20200715180703586_COVER.jpg

Smoked on the P&S at 200°F until an IT of 115°F

got a small batch of charcoal in the chimney with the grill grates heating up. was worried about scorching so only about 45 seconds per side. still got some scorched garlic but not too bad.

    Meat Hammer!

sliced and ready to sample. Also a great excuse to open up a new bottle that I've been sitting on. Steak finished in the low 120's after resting. I got some quick notes on the spice split too. :bananadance:

I don't want to admit out loud how long it's been since I've done steak... :anonymous: But this helped make up for it :D

If I would've started a few hours earlier I could've just set it on the grill lid and cooked it the same :bananadead::D

I went out for a ride on the pedal bike after work last night. About 80 minutes, certainly cleared the body out...

Not at all, but just a touch above, "Bessie took her last breath 30 minutes ago, just shine a flashlight on her for a minute, and let's dig in!"...

It happens. We didn’t do steaks for a while either. The cost had become stupid and they got hard to find here. Excellent work though.

I upped my fire+meat game since recently relocating to Texas. Last week's project was a proper brisket; H-E-B Texas Prime, 8 hours in mesquite smoke. It was amazing.
