Last one I did I made a simple syrup for it also to make it a little sweeter. Saw someone do a jalapeño mojito in FL. That interested me. Nice work good sir.

Jalapeno sounds good. Simple syrup sounds like it would mix better too.

Thanks for the idea and the impending night of indigestion

Oooh do we have a delicious spicy dish going tonight. It's Friday and time to wine and dine! Bone in NY sirloin $7.99/lb. 0.8lb steak. Coffee red pepper rub, charcoals left over from a brisket smoke, and shrimp and a cubanelle pepper from the garden.
    The rub
    Nice Bermuda sauce
    4 min a side.
PlatedAnd for those that need proof of perfection

Man it's got some great kick with the spicy shrimp and peppers. Plated over some Rice Select royal blend Texmati white brown and wild red

Lordy Son, how do you eat that thing. You must have been born with quite the unhingable jaw, or are you deep throating fire hydrants to prep for that?

Today’s smoker experiment: salmon fillets and beef finger ribs with a white rub and apple smoke.

I'm not quite sure. I did think for a minute about what to put on top of what; did I want the beef dripping on salmon, or salmon dripping on beef. That said, the salmon will be in smoke for 1-1.5 hours so I put that on top. The ribs get 5-7 hours of smoke. I'll also probably toss some sausages in there for the last hour.

I always worry about that as I know after smoking fish I need to clean my smoker out or the next smoke will taste like fish.

Congrats and welcome to the kettle club!

We seem to have somewhat similar tastes in food and ever since you posted the pasta salad your little lady made can't get it out of my head. Was in the grocery store last night and they had bowtie pasta BLT salad. Close enough screw Atkins :anonymous:

How hot is it? Neither dog will stay out on the deck with me they both go inside after a couple of minutes and stare at me through the sliding glass door. Heat index is over 100° but finally starting to drop.

Love the 26" kettle for smoking and couldn't decide on what to have with the BLT pasta salad so...

    18th Mix.jpg

2 onions with half a stick of butter in each. With lots of brown sugar. Stuffed mushrooms and peppers. Bacon cheddar brats. And some smashed sausage burgers fried in the old small logo Griswold frying pan (inside) that I just put on. I might find something in the mix to go with the pasta. And chips. And potato salad. Don't think I will be taking a plated picture I will be in a carb coma...

Speaking of carbs, I need another beer.

You gotta take a break every now and then. And you're not over doing it (too bad)... that all looks great.
