    It’s not often I post my own creations here, but I offer for your consideration - Greek quesadillas.

    Inside is lamb/beef, portobello mushrooms, spinach, feta, mozzarella (as a binder) and Cavendar’s Greek seasoning.

    That's a great idea! Never thought to do that with my leftover lamb. We make quesadillas all the time but now I have to try this. Maybe some tzatziki in there too!

    Didn’t have any tzatziki, but it’s a good idea.

    Didn’t use pita, either. We had some extra fluffy tortillas that for some reason crisp up beautifully.

    I’m still wallowing in the afterglow of that. The mushroom, the lamb, the spinach...sooooooo freaking good!

    Just tried to knock out all the leftover shrimp so we werent just throwing them away as we leave... Me and my wife killed a little over half and then 2 if the kids here have eaten half of what was left... Down to 1 dozen or so left and I have tapped

    Yep. Have a rotisserie for the grill. Ground lamb with a stand mixer attachment, finish off the lamb in a food processor.

    Dinner was scallops and asparagus on the grill. Started on the smoker and then finished on a hot gas grill. Scallops seared on the back side of GrillGrates. Served with pesto pasta.

    Scallops are my favorite seafood. I love doing them wrapped in bacon with a crabmeat stuffing. So freaking good. I've been meaning to try doing them on the grill with the maze smoker to see how they come out.

    I did mine tonight and it was fantastic. I made up a tzatziki with dill and mint added. Definitely going to have to do this again.
