    So I hate to be that guy but that deserves some country gravy. Maybe use the fat from the brisket to make the rue. Looks good, now make it great. :rofl:

    I dunno man... That gravy was good!

    Not that country gravy would be bad... Cause obvious reasons :rofl:

    For a first attempt I'm happy!

    Needs less sugar in pickling liquid. Jalapenos were too tame. But the rest went really well together.

    But I'm willing to add it to list, for science!

    No doubt brown gravy is good. BUT country gravy might just put it over the top. Wonder how it would be with some pickled okra in the mix also? You realize if we lived close we would both weigh like 500 don’t you? :rofl:

    Worth it! But... The tv series is 600# life... We gotta up them numbers!

    I went with grated onion heated in butter, add flour. Cooked off. Added brisket drippings. Added bone broth. Couple pinches of On Point. Salt to taste and reduce.

    You know what that gravy would be freakin great on? Hot Roast Beef Sandwich. Smoked roast beef, some Texas toast, covered in your gravy, mashed potatoes with gravy. :drool:

    Well @Misplaced Nebraskan makes my plate look like a McDonald’s meal.... still came out good though. Gonna have meat for a month now

    I went with pickled because in something like this you need a vinegar to help cut all the fats. :)

    As much as I like brisket and pork ribs, beef ribs are my absolute favorite smoker meat. Those look great.
