    Really just treat it normal. Stalls can vary but it may finish it a slightly higher temp. But I just start poking it around 195* internal and every few degrees after that like normal.

    I find them to be ever so slightly closer to beef ribs. A little bit richer and oilier due to the fat. Really good.

    Don't stress too much and just roll with what you know how to do. :fistbump:

    Zach got me two and I cooked the same as a regular prime brisket. Just watched them closely. They were great.

    Thanks for the info. Just a normal smoking day with my beloved BGE. Doesn't even bother me that it's mowing day since I know I'll be eating good tomorrow. It's trying my hand at changing out one of my garage door openers, that went out Tuesday, for the first time that intimidates me just a bit.

    Garage door opener is pretty easy. They usually have really good instructions if you get a good replacement unit. Now the door itself that’s when I tap out and call a guy who knows how to not do great bodily harm to himself. Those tensioners can mess you up badly.

    Your spot on about those springs. I've had a couple break and called a pro. They will mess you up if you make a mistake winding them up.
