Who's good with alignment on the East Side of Houston? 2" lift, so shouldn't be too bad.

Duggy's Garage up in Aldine is who I'd use. Used to go to a place in Deer Park that was good, but the quality of service has suffered significantly over the years. The drive to Duggy's is worth it.

The dreaded alignment. Just went through alignment Issues with the wife's 4Runnner. I had good luck years back with Autoline of America in Deer Park but chose not to use them this time. This go around I had success with Axle & Wheel Aligning Company in Pasadena.

Why are Toyotas hard to get into alignment?

No clue, but both my truck and the 4Runner had the same issue and same fix. Pulls to the right after lift. Caster specs need to be more positive on the passenger side. 4runner has a cross caster of -1.6 degrees, well out of spec. Tacoma is similar. I always have to tell the alignment guy at Firestone to not touch anything other than toe, else they'll mess the caster settings up.

I'm sure mine is all messed up, went from stock to 2+ over.

What's the numbers I should be shooting for?

There's entire threads dedicated to this info. Toe and camber as close to 0. Caster needs to be close to 2 degrees or more IIRC. Low caster and the truck wanders at highway speed.
