Would I be able to fit these tires and rims on my stock 2019 tacoma with only plastic trimming? The Arkons have -51 offset or would I be better to get the Tis’s that have -44 offset I don’t really want to rub at all

Probably but I don’t know how much you would be able to lower your truck with that size tire might want to look at a smaller tire you would have way too side wall with those.

I don't think you stand a chance in Hell if getting those to fit with those tires. You need a sawzall and a torch.

yeah. that aint gonna happen. your gonna need atleast a 6" lift to make it work. at stock height? with minimal to no trimming and no possiblity of rubbing? shoot, at stock height these trucks have a hard time getting away with 17x8.5 -12 on 265/70/17. either gotta step your game up or bring your expectations down lol. sorry man. just the way it is.

you got some hustle kid. give ya credit. if i was you. i would just save your skrillz for now. i know its a plain jane answer, but atleast when its time to spring for something you like youll be able to do it right and not mickey mouse it together. cause if you just buy those rims now its simply not gonna work and your wheels and tires is just gonna sit on the side anyhow.

For reference, the more you poke out the more it's gonna rub. And throwing a bigger tire into the mix it stands no chance.
Do me a favor... go outside, cut your wheel all the way to the right and go look at the rear of the tire and imagine what even one inch increase in tire diameter, never mind greater wheel offset, will do.
When you lift, you can't get away with it either because as your suspension cycles up and down you will rub. If you want to go big, a cab mount chop, pinch weld grind and a lot of plastic has to be removed, not counting new upper control arms so you can set your caster back to normal.
    Good luck man.

I’ve decided to not go so big I’m just gone get some rims and tires that are stock high I’m going to get some 26 inch replicas on some 31 inch streets I’ve already did the research they’ll fit without lift they’re only 10 inches wide so
