    Damn. Every Farmers box I get has green onions in it. (CSA box). I burned thru a lot of them by making a Malaysian Green onion and sesame seed pan bread. It’s the fastest ticket to my wife’s good side.
    Not easy but fun to make.

    Mango, pepper, bacon and lime juice salsa. Hot sauce and Romain. Pork was heated in some taco seasoning

    So Beef Wellington is by far my fav dish and I cook it for Christmas dinner every year. I’ve been craving it lately and thought, well hell why not make a BW hamburger so.....
    The original recipe I use for the real one:

    So for the burger the main change I made was treating the prosciutto like bacon and lightly browning it.

    Then reduced a 14oz can of beef stock down 2/3 and whisked in 1T of butter and 1T cream in off heat.

    Made the mushroom duxelles

    Grilled the burgers, when I flipped them they got spread with the mushrooms topped with prosciutto and Swiss. I toasted the buns while the burgers rested. Spread the bottom bun with the Dijon horseradish mixture, burger and sauce. Hands down best burger I’ve ever eaten!!!!
