    Obligatory knife pic. This one came out great. 5 hours at 250*, then bp wrapped at 300* for 3 more hours. Only 9 lbs. after trimming.20200823_145635.jpg

    I have a UDS I built back in 2009ish. Haven’t used it in the past few years but need to get back into actually smoking meats instead of using my pellet grill.

    CRAZY day today...We had massive thunderstorms come through and try to ruin my parade...
    So the day started off sunny and bright...
    Got some nice BBQ Pork going here...cut it in 1/2 because I was supposed to put it on before bed but fell asleep ;)

    The issue with the Weber Smokey Mountain is the water will make it's way into the smoker and snuff out your hot coals...
    We must have had 3-4" of rain today...
    Now it's cooling to 150F and waiting to be pulled...I have been snacking and dipping in BBQ sauce and it's fantastic...9lbs coming up!

    Tried something different this time. Trimmed it up but semi separated the flat and point. Let it cook for about 4.5 hours to get a good bark on it. Separated it. Let cook until about 160ish wrapped it and cut up burnt ends at 200. Pulled flat at 209. So tender it wouldn't even fold just fell apart.

    Some flags and center console divider... lots of things on the wanted list.
    Got a tri-tip and a butt in the freezer, waiting for a good chance to run them. But with the smoke already outside... I am trying to avoid being out there. Think I might run them up next weekend if the fires ease in the area.

    Did one tri last weekend. Wife said "was probably the best steak I have had in a while." Smoked at 185 for 3 hours, seared for 5 minutes each side on the gas grill. Rest, cut. Marinated for 8 hours prior with fresh squeeze oranges, soy, Worcestershire sauce, garlic and S&P. Might change up the marinade for the next one... Just gotta figure out what to.
