I found a good looking brisket flat at a good price. I've only ever smoked full packers. Any tips for doing just the flat? Higher/lower temp, shorter cook time, wrap or no wrap?

I pan instead of wrap for flats, with some broth.

We just moved, the people that bought our house didn’t want the fridge. We have three now.

forgot, there is a kegerator in the basement already.

I have one operating in the garage for beer and frozen foods. Might sell the other.

Just a heads up in PA: https://www.hunker.com/13409794/can-i-put-a-refrigerator-in-an-unheated-garage

If your garage isn't heated you can run into some issues with that. I'm thinking about a deep freeze if I get into bird hunting, those fill up quick :D

The one that’s operating in the garage, is garage rated. Never knew such a thing existed until we went to buy one a few years ago.
