    Have you tried any grilled or smoked desserts? That's something I have yet to venture into beyond grilled peaches and watermelon... skip the watermelon... it's better cold.

    Have you done goat? Goat is a lot more accessible than ostrich.

    there’s also bison. Easier to grow than beef and better for the environment and cheaper yet the cuts are like 5x the cost because it’s trendy. :frusty: But could probably find something nearby.

    Pull some chilis out your garden and make barbacoa with a tray of veggies underneath to catch the juices. That's always a go to for me.

    I don’t aim for expensive. The point of barbecue is that it took the scrap cuts that weren’t good enough for the rich, and they tossed them toward the poor/slave population. Barbecue was making those cuts taste good and be edible. Then you see brisket bridging 10$/lb in some areas, it’s counterintuitive to the entire point of it all in my mind.

    That’s why I said you can probably find bison but it might be expensive because it’s trendy to want bison because it’s better for the environment.

    what about Lithuanian? Have you ever tried a berbere heavy rub before?

    How's beef prices doing for everyone else? Returning to normal?

    Costco seems to be getting back to "regular" prices. Last couple times I went the briskets were $2.59 for Prime, but there were only one or two available and they looked like, as @Bigdaddy4760 calls them, ridin' bull briskets. :rofl:
