    We shall see. I have it running at 225. If it’s done early I’ll pull, wrap and cooler it. If it looks like it will be longer then I planned then I will crank it to 250 or so and let it finish off.

    I usually run 225-250 the only hot and fast I tried was not up to my normal cooks. I did 225 so I can get some sleep and not worry to be honest. I don’t fully trust this pit so lower was better for piece of mind. :rofl:
