    Long time cast iron and dutch oven user here. I acquired a new camping toy this week. A used Camp Chef stove. It works great with cast iron because it's very sturdy and also gets hot AF in a hurry. No more messing around with weak camp stoves!

    Super simple. But I eyeball everything - from my head (ask if unclear):

    Soak a # of dry pintos overnight

    Bacon (1/4# or to taste), cubed ham steak and chorizo or linguica (I used linguica) - handful to a cup

    Saute bacon until crispy then add other meats and three garlic cloves. (Some people add cilantro stems, I don't)

    Roast the living shit out of a cut onion, a meaty tomato or two, and a jalapeno or two. Concentrate the flavors. Toaster oven in picture

    Throw the onions and pepper in and add the beans to the pot (no tomatoes yet, acid keeps the beans from becoming tender) and cover with water or broth. I try not to over cook my beans, mainly because not making refries.

    Salt and pepper to taste, mex oregano, red pepper flakes if you need the burn.

    Cook until beans are just tender. Add tomatoes, some cilantro (no!) and salt to taste. I grate some smoked cheese on top - da BOMB. Serve with tacos, over rice even.
