    I texted @Bigdaddy4760 and @Misplaced Nebraskan and said it was a top 5 of 2020 for me. I took strips destined for burnt ends, then turned them in their side and trimmed the bulk of the fat off them. I then seasoned with On Point. The trim made them a tad on the dry side, but it actually really works. Almost a pepper jerky feel, but more moist than jerky due to the intramuscular fat. For an appetizer? A real banger.

    Chopped beef was excellent. Our KCBA first place beans were as good as expected (total humblebrag :laugh:). Can't say much more about the pork belly that hasn't been said. Mac n cheese was nothing special, but rounded out the plate well enough.

    Butt and flat went on the WSM this morning. Low and slow until 1PM, then bumping temps to 275 to finish a little quicker. Pitfaced original on the butt, and Salt, pepper, and On Point on the flat. Going to try not wrapping the butt if possible, panning the flat.
