    Also, I grew up in texas, live in KC, and had some of the best ribs ever in Memphis.

    I like the variety of serving methods. You can get bbq in every possible way - from cloth napkins and well dressed waiters to slapped down on a piece of paper in a smoke filled room after standing in line for 30 minutes (I'm looking at you, luling city market...)
