I actually used my uncle's traeger this weekend, and now I have a bunch of delicious brisket in the fridge. I'm torn.

Also, I grew up in texas, live in KC, and had some of the best ribs ever in Memphis.

Let it ride, wrap it, wrap it in foil, wrap it in butcher paper. It’s all good just different.

 

I like the variety of serving methods. You can get bbq in every possible way - from cloth napkins and well dressed waiters to slapped down on a piece of paper in a smoke filled room after standing in line for 30 minutes (I'm looking at you, luling city market...)
