Buy cheese, forget about, and be lazy when you could actually smoke it. 18 months later, smoke it.

it was cheap store brand I bought on sale. Then just decided to see how far i could push it. Read a bit about aging, and it said just refrigerate in original packaging. So there it sits. It appears to be “fine” in the package, no mold. I plan to smoke it in the next few weeks. I’ll post results.

Smoking cheese couldn’t be easier. I cut mine into 1”x1” blocks. Smoke for three hours with apple wood. Turn every 45 minutes or so. Keep smoker below 90f. I use a tube with pellets. Dry on the counter or fridge overnight, vacuum pack and rest in fridge for at least three weeks to mellow.


I try to do a bunch in the fall and spring. Friends end up getting most of it.

I am mid way through season two now. Me and the Wife been binge watching at night.

 

Done it before. My balance isnt great anymore but they got insurance, I can make it work.

That would be fun. I'd be in jail.
