    Happy Thursday all you fools...

Ya boy has a pellet smoker now (Recteq RT-340), it was free, used, and in the most disgusting shape ever, as the previous owner never cleaned it, the drip pan had a solid 1/4" to 1/2" of grease, grime, and just grossness on it, it was so bad that it had gone underneath and into the bottom of the smoker... you do not want to see the before pictures of it. :puke:

But after about 3 hours of cleaning with a putty knife, one grill brush, a damn chisel at one point, and two burn-ins to make sure I got everything, I broke it in on Sunday with a Pork Butt, some boudin, and some a simple version of Meat Church Smoked Queso, which I am going to have to downsize the recipe again cause it made way more than expected.

    But boy am I excited.

Pro tip: you can freeze the queso and warm it in a crockpot, eliminating waste and extra time smoking more queso in the future

Lol, it was so good though, definitely a repeat recipe for queso. The actual recipe calls for two tubes of breakfast sausage, I only did one as I was like that seems like a lot of meat for the cheese here...

    https://www.meatchurch.com/blogs/recipes/smoked-queso

    I ended up doing:
    1 block of Velvetta
    8oz of Smoked Gouda
    1 tube of breakfast sausage
    1 can of rotel
1 can of cream of chicken
    Seasoning

Went in a 12" Cast Iron

Luckily I had friends that took some home, so there was none wasted. But now that I know how much I made, I can make a smaller version in the future in my 10" skillet if I want. :D

Well finally hopping on here after my NM trip over Labor Day and boy was that a damn fun trip! I would 10/10 recommend everyone go up there!

We ended up going all the way up to GSDNP and that was pretty cool. We drove back down to Red River and hit up some OHV trails which were super narrow and definitely sketchy. I got to cross a river and the water came up to the doors so that was interesting.

We definitely preferred angel fire over red river, red river seemed super touristy.

If you ever get a chance to go out there I would definitely recommend it!

Looks like you had some great weather for the trip. Did you see many other people camping and stuff out there?

Originally it came with a sub but it’s blown, so I bought a Rockford Fosgate p3 8” 2ohm to put in its place. Then I decided that since I plan to keep this for the foreseeable future that I’d invest into the HU and update the audio a bit so I bought a Pioneer 4500nex. Now Id like to get a nice set of speakers, amp, run new speaker wire and dynamat the doors.

I’m not trying to get super crazy with it but want it sounding nice. This will be my first time putting this much into audio.

most of that is easy, running new wire could be a total pain in the arsehole. Wiring an amp is easy esp with an aftermarket HU already. I can help do most of that. The absolute key thing is make sure you buy speakers and an amp with matching power ratings. Match the channel output RMS wattage of the amp to the nominal wattage of the speaker in the proper ohm load. From there, just make sure the speakers have the response range for how you like your music to sound.

I just realized Jason's bumper is hanging in Maner's shop in Frank's illustrative representation. Excellent detail.

Honestly once you got on the actual trail portion that trailers couldn't get on it was pretty much just us and 1 other car that went to a different spot that night. Just saw him drive by and that's it! It was amazing how secluded it was considering it was Labor Day. Lots of people on UTV and 4wheelers tho, but as soon as 5pm rolled around it was just us and nature.

I got a new serpentine belt since I'm over 100k. The old one still looks ok, so I'll keep it as a spare. Also going to do the unifilter mod for the emissions pump thing.
