    Well @wilcam47 even with the hour or so delay this morning I just pulled it off at 4ish at 201 IT with some good tenderness.. now to let it rest!

    Bought 5 bags of Lowe’s generic brand Ridge over Labor Day. Today was my first cook with them. Mixed bag. Super consistent burn but a very slow burn, almost to the point it wouldn’t keep the charcoal “snake” going. Kinda fizzled out about 3/4 the way through.

    Four and a half more bags to figure this out.

    Apparently they’re made by Royal Oak which I’m usually a fan of.

    Couldn’t get my brisket over 200 without lighting new coals.

    Guess my family just goes hungry since I couldn’t meet the expert advice of 205*.

    Throwing this unworthy brisket away.

    Got 3 racks coming off in about an hour. The wind today has been a pain fluctuating my temps a bit but they still look amazing. Will take a pic once I pull them for rest.
    The smell all day in the backyard has been blissful.

    Well here’s a write up of my first brisket...

    Trimmed and seasoned last night around 9:30pm and put back in fridge for morning cook
    Took out of fridge at 5:30 and pellet pooper started properly (or so I thought) at 6:00
    Temp rose to 150 then i moved it to 225, put the meat on, then the temp just dropped...
    Took meat off and did shut down process and then unplugged and replugged in and started the process of starting it up again.. got to 225 and threw the meat back on and the temp kept climbing to 400 before I caught it....
    took the meat off quickly and did the shut down process again...
    took the grates off and took everything out to clean the fire box out hoping that would do the trick.
    Had a smoke tube going also

    Got it started back up and temp held great the rest of the day...
    got the meat back on about 710ish am.
    Forgot a water tray until the 3rd hour of smoke
    Wrapped about 11ish at 157 in the point and 161 in the flat.

    Stalled for about an hour in a half @ 195-197

    Pulled off at about 4:05ish and put in cooler to rest for two hours...

    My opinion...
    Taste was good
    Was drier then I wanted
    I wonder if I trimmed to much fat off

    All in all it wasn’t horrible for my first one but left a lot to be desired.
