    I'm no expert, so I defer to experts:

    The Perfect Brewing Temperature

    As I said before, the brewing temperature is directly determined by the other brewing factors: grind size and extraction time. There are a few more factors that play a role, for instance, pressure, or agitation, (read stirring). These are specific to only certain brewing methods.

    We are only discussing here the automatic drip coffee maker method, the most popular coffee brewing method. The specialty coffee authorities have established that the perfect brewing temperature for drip coffee is between 200° F ± 5°. Under 195° F coffee will turn up under-extracted and will taste sour. This is because the acids in the beans are extracted at lower temperatures. Over 205° F coffee will be over-extracted and taste bitter. Sometimes will be astringent.

    For the sake of precision, Specialty Coffee Association of America and the National Coffee Association recommend brewing coffee between 195 – 205° F. This actually includes hand drip method as well. Hand drip temperature can be tweaked, but this is the subject of another article.     I’ll assume you didn’t look up the video. I used to do the cooler water temp thing but after watching James video I haven’t looked back. There’s really no reason not to use boiling water. Here’s the video for you and others. I thought I was making good coffee before and then I started following some of his brew methods and it was a total game changer.

    If you do, you are the exception to the rule. You can do as you wish. I am not going to tell you otherwise.

    I do brew 'just off of boil'. Boiling water taken off the heat, is no longer boiling. It is 'just off of boil'.

    I did not look up the video. I will not either. People I personally know and have had face to face experience with have proven, to me, otherwise. YMMV.

    BTW, I do not add milk to coffee. It is not bitter, it is fruity, so I do not need milk.

    Idk who you’re quoting but I’ll assume it’s me. If you bothered to watch the video I posted, it’s all as you put “just off boil”. It’s the same damn thing. Kettle hits 212* and then it holds at 212 until I take it off. So if you want to be a smart ass about it, then sure, I don’t use boiling water either since it doesn’t continue to boil once removed from the heating element.
    It still continues to amaze me that there are so many people who refuse to take any other information from credible resources and just cast it off without even looking into it. Hoffman is not just some “YouTube famous” coffee guy. He’s won awards for his brewing. He knows what the fuck he’s talking about.

    I’m not going back to read threads but glad to see other roasters here. This is my setup grill drum I can roast 5 pounds at once. Get my green beans from Burman coffee up in Wisconsin he has an amazing selection.

    Yep that’s how I started with an air popper and on the stove. I still do small batch samples in the stove but we drink a lot of coffee plus I give some away. How do you cool your beans? I’m always interested in everyone’s cooking contraptions

    I use this to cool my beans and blow off the chaff:

    I'll basically sift/air/stir the beans until they've dropped well below roasting temperature, and the roast has stopped. Once that's done, I pour them into my air-tight canister. If it's the first batch, I start roasting the second.

    I roast a cup of beans at a time, and do two back to back roasts. This is enough to last about 10-14 days, then I do it again. :) If I buy a automatic roaster, want something relatively small...something that roasts about 2-3 cups of beans at a time.

    Haven't found any local place that sells green beans, so I have to order them online. Sweet Marias and Amazon are your friends...lol

    If you have a good roaster nearby you could likely get them there. Otherwise there’s a handful of places online. The place I used to buy coffee from online sells green beans and has a decent selection (happymugcoffee.com). I know there’s more, I just haven’t looked into it as I don’t roast myself.... yet
