    It's difficult with electric so I sympathize. I can't pressure can on an electric stove and would have to bust out the camp chef outside of I needed to. Seems silly but electric has its limits and is a bitch to clean anyway.
    Don't overthink it. Being in the place of both a seller and buyer lately I see both sides. You compare people's financing, down, earnest money against each other and either risk going with highest bid or who has the most secure financing. No seller wants to be stuck in contact with someone trying to come in with nothing down and a long close. Too risky and if it falls through people always look at the house wondering why it's been on the market so long and had a contact fall through. They get suspicious rather than considering that the buyer had issues.
