    Mustard all the way. Mayo is something you mix sparingly with tuna or egg, not something you use as a topping.

    I have no problem with mustard... But I absolutely refuse (and have done so on countless occasions) to eat a "sandwich" without mayo. I have been known to throw the bread away and just eat the meat and cheese... It goes without saying that mayo is more important than bread to me

    I cheat when I cook chicken in the crock pot; once it's done I just transfer it to a cast iron pan, spray some olive oil on the skin, and put the pan in a hot oven for like 15-20 minutes to crisp the skin up.

    I too have done the post sear but I have found you limit some of the excess liquid that causes sogginess if you presear because a good bit of fat renders out and you can keep it out of the pot

    Eh. That doesn't bother me so much; I cook mine on the wire rack that came with my Instant Pot so they're not soaking in it anyway. And if I'm bothering to slow-cook it it's always either a 1/2 bird or a whole bird as well, so searing takes more time than I'm willing to spend before I leave for work for the day. That's why I said that I cheat with my method; all of the crispy skin of a roasted bird, but none of the work searing it before it goes in the pot. :laugh:
